Apricot, Almond and Cranberries cake



Recipe is from chef Hugh Fearnley-Whittingstall.  Not familiar huh..but how about River Cottage..sounds familiar?  Ocassionally I would sit and watch this programme till the end and I must admit he has good shares of simple and healthy recipes.  As usual, I did a little tweak here and there I managed to get three loaves out of this recipe.  Original recipes calls for apricots, figs and prunes.  Since I only had apricots, almonds and cranberries in my fridge I just proceed with the baking. 

Mum loves this recipe and its definitely a keeper.  Will share the recipe later. Till then, happy weekend to all.
