Saying Hello Again...

Image
After quite sometime, MIA and here I am still wondering what to ramble here.  Alhamdulillah! Its 2020 already and I never thought that I would still be around 2020. Been busy with a lot of things, especially baking things that I wanted to bake since sometime. Such bakes as in Mixed fruit cake that I have been baking a couple of times since the beginning of the year.  I never thougt that I would seriously get to bake a fruit cake.  Fruit cake has always been in my fear list to do actually as I never seem to come up with a good fruit cake.  But then again, as they say practice makes perfect..not perfect yet but am glad that I received some orders already..so yeah!!! that is one little achievement for me.

Over-Baked Congo Bars

Image
I love Congo Bars @ Blondies than Brownies actually though I baked more Brownies than Congo Bars.  I must admit, I have only tried around 2 - 3 Cong Bars recipes and I have decided to stick to the one from  http://kitchenguardian.blogspot.com/2015/02/being-true-to-yourself-lets-bake-congo.html   This recipe is a keeper and never failed to get repeat orders from my customers. So I baked this Congo Bars last week,  a bit overbaked though but still delicious. I just dumped all the left-overs from Raya Haji baking to come up with this Nutty Chocolatey Congo Bars. Yumm!!!

Saying Hello again....

Image
Dalam malas-malas nak berblogging bagai nak, kesian juak nanga gambar macam2 jenis kek yang diambik. Share jaklah, share gambar jak, resepi courtesy of Mr. Google lah. Semua urusan di ujung jari kinek, ketek2 jak sia.  😃😁😃😄 Just sharing some cakes and bakes during the last Hari Raya Haji.  I braved myself to indulge with fruit cake baking now, alhamdulillah my fruits floats nicely and none sank.      Steamed Prune Cake  Mixed Fruit Cake Cream Cheese Pound Cake This particular recipe surprised me as it has the same fluffiness and buttery taste similar to Mita Butter Cheese Cake. Am sure Kuchingites knows of Mita Cake House.  Their signature Butter Cheese Cake is a hit with non-Kuchingites nowadays.  Currently, Mita's Butter Cheese Cake is my first choice of gifts for friends and relatives whenever I travelled. That's all for now.  Till then....

Carrot pineapple cake

Image
My version of Pineapple Cake with some twist here and there from the original recipe which is from Inspired Taste  and yes it is moist indeed and not too oily compared to a few recipes that I tried which calls for 2 cups of corn oil/vegetable.  This recipe only uses 1 1/4 cup of corn oil.  Rave reviews from my friend and she loved it and which I had shared this recipe with her.             Made this cucur pusuk Adabi and this is how I eat my cucur, with mixture of mayo and Maggi Chilli Sauce.   That was how I spent my weekend apart from watching the Hitman with Mbok.  The rest was a quiet and peaceful weekend for me.

Apricot, Almond and Cranberries cake

Image
Recipe is from chef Hugh Fearnley-Whittingstall.  Not familiar huh..but how about River Cottage..sounds familiar?  Ocassionally I would sit and watch this programme till the end and I must admit he has good shares of simple and healthy recipes.  As usual, I did a little tweak here and there I managed to get three loaves out of this recipe.  Original recipes calls for apricots, figs and prunes.  Since I only had apricots, almonds and cranberries in my fridge I just proceed with the baking.  Mum loves this recipe and its definitely a keeper.  Will share the recipe later. Till then, happy weekend to all.

Coconut Cake

Image
I love BW and most of the times its in search of new recipes, new ideas and inspirations.  I love this particular blog (of course, I have loads and loads of other favourite blogs too) I find her blog to be a very inspirational and at times I find myself at peace reading her postings.  Alright then, am not going to bore with details.  Just check it out Mamatiamia  and  I found this simple coconut cake recipe and had made it thrice eversince as mum loves the cake so much. This is a superdelish and easy-peasy recipe and you can just whip this up in 15 minutes only.  Just ignore the amateurish look of the photo ya.

Looks can be deceiving... Kek Marble Shiela Mambo

Image
I baked this (hmmmm..how shall I put it in words now...) a Marble Cake gone wrong?!!!  This marvelous and scrumptous recipe is from  CMG  .  I can say that recipe is picture perfect but compared to my effort of making the marble effect...***sigh****...I still fail to come up with a beautiful marble effect and I guess one of the reason being the chocolate marble sanked at the bottom of the cake was because it was too heavy from the other batter. Too much cooking chocolate cos I doubled the recipe plus some tweaks here and there, plus this minus that etc.  I used margarine instead of butter but verdictwise, mum and sis loves it.  According to them its crumbly and heavenly but too sweet.  Even CMG mentioned in his entry that the recipe was too sweet but  I will definitely lessen the sugar again and the cooking chocolate in future.  I have a knack of doubling the recipe e...

Heavenly Carrot Cake

Image
I made this a week ago and it turned out to be super delicious though very moist but I love it.  The next time I will add  tablespoon of flour for a better texture as suggested by mom but I like it as it is.    Source:  CMG My version:  Followed the exact recipe but I used almond slices instead of walnuts and no cream cheese frosting needed as it was good on its own.  Probably the next one I'll make a complete recipe.  Verdict:  Heavenly indeed

Lemon Butter Cake

Image
My baking mojo is back and yesterday I gave Rachel Allen's Lemon Cupcake recipe a try.  As usual, I did my own version of the recipe and I ended up turning the cupcake recipe to a Lemon Butter Cake with Butter   & Cheddar Cheese frosting.   Verdict is, recipe is perfect but the next time am making this, I will lessen the flour. It was a hot and wet weekend here, the morning was hot and sunny and halfway to noon, it rained heavily.  I am looking forward to my balik kampung trip to Miri this Wednesday till next week.  I'll be attending a niece wedding plus some other plans to meet old classmates to discuss on the upcoming class reunion for next year.  I am super excited about the whole thing actually but I somehow can't expect the rest of the gang to share the same feeling with me.  I know that some are anxious and looking forward to attend the next reunion.  And some are not...Honestly, I do not want to worry so much cos it's about 7 m...

Baking again

Image
And so when the rajin bug comes suddenly knocks on my door, I  baked 9 loaf pans of cheddar cheese cake last night.. Brought them to the office this morning and everything just disappeared swiftly. Good news is am getting pre-orders already.  Alhamdulillah for that but I doubt that I could bake some more..oh well!..we'll see how everything goes this week.   My version of Cheddar Butter cake with cream cheese frosting and a plain Cheddar Butter cake.  Recipe is from Alex Goh which I took from Mat Gebu .  Recipe is super easy.  I somehow had forgotten where I copied the cream cheese frosting though but the recipe is an easy peasy one.  Cream Cheese Frosting 250 gm cream cheese 125 gm butter 3/4 cup icing sugar 1 tsp VE 250gm cheddar cheese (shredded) My verdict:  I found that Alex Goh recipe is too dry, I was looking for something kinda moist but I can't seem to find any of that. Well at least I had tried this recipe. ...

Batik Perdani aka Kek Batik Arora

Image
Lazing around with nothing to do last weekend prompted me to bake this simple cake. As the other food bloggers has baked this wonderful looking cake, I said to myself, why not?.. I just need to get that baking itch out anyway. At times I find it hard to decide to choose what to bake. Of course it depends very much on what is available in the pantry. Which reminds me of Nigella's pantry...berangan la nak dapatkan pantry like that huh?.. Well, you never knowkan, just becareful what you wish for sometimes as it may come true ***grinning*** So much for introduction kan.  Sources:  Mamafami , CMG , Kak Yati  & originally from Cida My disastrous layering, at times I have a knack of trying to be sooo smart  hence the outcome of the so-called smartness.  Oh well, next time just go by the book huh..Dunno la what was in my mind when I started to do the layering.    The cake was still quite hot and due to my impatience this...

Wednesday rambling....

Image
It's the 2nd week of January already, how time flies..and the lazy bug is creeping back again. Been soooo busy this last few days and am not feeling that well either. Anyway, some things that I manage to bake and cook despite being busy. Pasta in tomato sauce a top favourite with everyone too, this is my serving and  I always love sprinkling of black pepper(lots of it) and some spring onion for garnishing... Butter cake...too much dusting of the icing sugar creates something snowy like this, blame me for it!! well..I wanted the cake to look nicer and presentable but alas...this is how it is I present this to the world...cehhh!!!!   ..but the cake is simply delish and was wallup in no time by everyone.

Rich Chocolate cake

Image
It's Monday already...mmmmm. Weekend has been fun, first me n Sue celebrated Djen's birthday, not that kind of fancy celebration tho but cosy enough for the three of us ..... Dear sis Djen is like a sister to both of us and she would consult either one of us for any kind of advises when she needs any. So for her birthday I decided to try one an old recipe that I found in one of mum's old magazines. So far, I've tried a few chocolate cake recipes but I can't decide any to be my favourite yet. The least of course is the one using vegetable oil instead of butter, ..personally I prefer a fruitless cake to use butter instead of oil...I would only eat a small piece cos I just couldn't accept chocolate cake with oil in it. I would go ewewewe all over. Ok back to Djen's birthday cake, I did a simple decoration only.  Am no professional when it comes to that but I used to watch mum did all the buttercream icing when I was little. Those days there were no bak...

Scones

Image
I have a very bad experience with making pastries which uses a rub-in method. Failures after failures of having to make a decent pastry out of this method had sort of freaked me out. However, with some courage I made up my mind and decided to give it a try yesterday. I decided to make scones, I have never tasted the actual scones and after looking and surfing over countless numbers of blogs and websites, at last I tried this simple scones which I found from Taste.com So here's my first ever scones and it was clearly everyone's favourite as the whole tray disappeared within minutes. And I had to make the scones again after that.  The recipe produced about 17 pieces but the first batch was only 12 as I was being very careful with the dough and followed the recipe religiously. And the recipe didn't fail, it turns out better after that, well....practice makes perfect kan...so Mum has requested that I make this again next weekend and she suggested that I add cheese, wah...

Felt so lazy to go to work today after two days' of public holiday. Tapi nak,pagi2 masuk ofis dah atang moha, well can't blame my fellow west malaysian about it though, most belum alert lagik tentang cuti2 di Sarawak, waseh...but morning2 already make my blood go upstairs you know! dah bagus dah ku jawap tepon ya, **** (nama fakulti) selamat pagi....and org belah nun pun jawapan, I have been calling your office for the last two days and nobody picked up, what happened to everybody (nada marah, almost shouting...aiyoooo). Oh My.......................Nigella!!!!!!!!!!

Image
Before I forget I think I better put this here. Watched Nigella's Kitchen 2 night's ago(it's the latest one as her children are already grown-up teenagers in the program)...and I managed to take down her Chocolate Peanut Butter Cheesecake. Simple recipe, I likeeeeeeeeee very2 much. Base: 50gm butter 200gm graham crackers 100gm chocolate chips 50gm peanut(or maybe 30gm)/ 50gm salted peanuts Filling: 500gm cream cheese 3 whole eggs 3 egg yolks dollops of sour cream peanut butter(she didn't mentioned how much but I saw that she was holding the small bottle) 300gm caster sugar /200gm caster sugar Topping: 250ml sour cream 100gm milk chocolate 30gm brown sugar (melted together) Sapa lah sik kenal dengan Nigella kan?...She's one of my cooking idol... That's her husband, Charles Satchi who ironically doesn't eat whatever she cooks. Mmmmmm... Oklah ..enough of Nigella.... All pictures credit to BBC. As for the above recipe, I will t...
