Heavenly Carrot Cake

I made this a week ago and it turned out to be super delicious though very moist but I love it.  The next time I will add  tablespoon of flour for a better texture as suggested by mom but I like it as it is.    Source:  CMG My version:  Followed the exact recipe but I used almond slices instead of walnuts and no cream cheese frosting needed as it was good on its own.  Probably the next one I'll make a complete recipe.  Verdict:  Heavenly indeed

Happy birthday to me......

Long overdue entry but I just have to blog about it.  Hey! It was my birthday so yours truly need to share it here. LOL!!!    The beautiful shells is edible and it's taste like a minty chewing gum and the sand is made of breadcrumbs.  Sis just told the chef to whip up something light and cheesy and  reflects my love for the beach and he came up with this super beautiful and simple cake.  Love it to bits. Happy birthday to me, alhamdulillah.  I received this beautiful light and semi-sweet cheesecake from beloved sister Mona and this Samsung Galaxy Nexus handphone from dear brother Helmi.  Thank you to both of you and all the wishes from friends and families.  Alhamdulillah, all those struggles that I had to face and the obstacles that I faced along the years has made me appreciative of every little details in life.  Alhamdullillah, ku panjatkan kesyukuran kepada Mu Ya Allah. 

Memorable trip

I was absolutely happy to meet some family members from dad's side and attending my niece and nephew's wedding last November gave me the opportunity to further strengthen some lost family ties over the years.  I'm glad I came and it was feels good being among your loved ones. Selamat Pengantin Baru & semoga berkekalan dan berbahagia hingga ke akhir hayat.  Love from Wa.

I was in Miri for 6 days last week.  Apart from attending the wedding of  my cousin's children, I simply took the opportunity to meet up with my ex-classmates and schoolmates.  My companion at the airport.  Bought this in Ramadhan this year but was so busy with the fasting and Eid preparation that I had almost forgotten about it.  Found it while packing the night before this trip.  Glad I brought it with me as my flight was a two-transit flight to Sibu and Bintulu before reaching Miri.  Oh well, what's there to complain, fare was cheap and simply irresistable to my purse.    Bored to the max and was getting quite restless, took these two pictures over the shores of Bintulu and the sunset.     It was a small crowd just 6 of us but it was enough to rekindle sweet memories of yesteryears.  Being with people that you love and whose company you enjoy, the conversations seems endless.  My deepest condolence to a friend who lost her husband in July this year

Kerabu Peria

Been indulging myself if in lots of good food last week that I only settled for this Bittergourd Salad for dinner last night.  Of course it was bitter but it has a nice tang to it cos I added some calamansi  juice(limau kasturi), salt and sugar for seasoning.  Recipe..super easy, saw the recipe in a magazine and I came up with my own version. Just slice the bittergourds and shallots, pound some chillies with dried shrimps. Mixed them all up and walla my easy peasy version of Kerabu Peria.  Best eaten chill after the the calamansi juice has nicely marinated the bittergourd with the seasoning. Back from Miri, I had gained extra kilos and I keep reminding myself  to watch what I eat.  I guess for a start, this will do.  And will I be disciplined enough to indulge myself in more healthy stuff...well, I can't promise myself but I will definitely try to put some extra effort.  I don't intend to skip meals or whatever but I'll be watching what I eat from now onwards and t

Lemon Butter Cake

My baking mojo is back and yesterday I gave Rachel Allen's Lemon Cupcake recipe a try.  As usual, I did my own version of the recipe and I ended up turning the cupcake recipe to a Lemon Butter Cake with Butter   & Cheddar Cheese frosting.   Verdict is, recipe is perfect but the next time am making this, I will lessen the flour. It was a hot and wet weekend here, the morning was hot and sunny and halfway to noon, it rained heavily.  I am looking forward to my balik kampung trip to Miri this Wednesday till next week.  I'll be attending a niece wedding plus some other plans to meet old classmates to discuss on the upcoming class reunion for next year.  I am super excited about the whole thing actually but I somehow can't expect the rest of the gang to share the same feeling with me.  I know that some are anxious and looking forward to attend the next reunion.  And some are not...Honestly, I do not want to worry so much cos it's about 7 months' away and a l

This is my first attempt on Sheperd's Pie and according to my No. 1 critic, it was good and spicy(she loves it to be hot and spicy) but the filling was quite wet, it was suppose to be dry but hey...it's my first attempt ok so I should be proud of my effort. Nearly forgotten...

This is exactly how I like my fried Kwayteow to be, with loads of bean sprouts.  Yessss, loads of it (in fact,  I used up the whole plastic which only cost $1.00).   I managed to fry this a few weeks ago despite of my sister's objection..hahaha..sorry dear sis.,  I just can't entertain your request the other day.   My sister simply hates taugeh, she'll go hysterical when she see's any  traces of taugeh in any of her meal.  She is dead serious when it comes to taugeh.  I remembered the time when we used to patronise Mbok's restaurant a few years ago.  She ordered for Sarawak Laksa and she specifically mentioned to the waitress not to put  any taugeh in her laksa.  She even asked the waitress to repeat her order.  And guess what came out from kitchen, Sarawak Laksa with taugeh!  Ahaks!!!...She gave a look that could easily sliced the heart out of you and immediately got up and left the restaurant and me.  I was lucky to be left in a friend's restaurant.

Baking again

And so when the rajin bug comes suddenly knocks on my door, I  baked 9 loaf pans of cheddar cheese cake last night.. Brought them to the office this morning and everything just disappeared swiftly. Good news is am getting pre-orders already.  Alhamdulillah for that but I doubt that I could bake some more..oh well!..we'll see how everything goes this week.   My version of Cheddar Butter cake with cream cheese frosting and a plain Cheddar Butter cake.  Recipe is from Alex Goh which I took from Mat Gebu .  Recipe is super easy.  I somehow had forgotten where I copied the cream cheese frosting though but the recipe is an easy peasy one.  Cream Cheese Frosting 250 gm cream cheese 125 gm butter 3/4 cup icing sugar 1 tsp VE 250gm cheddar cheese (shredded) My verdict:  I found that Alex Goh recipe is too dry, I was looking for something kinda moist but I can't seem to find any of that. That time of the month

Its the time of the month where I would crave for a hot kwayteow noodle for lunch with warm lemon tea.  Unfortunately the chilli in the soy sauce was not hot and spicy at all and it has reduced my anxiety to finish the whole bowl. This is a typical serving that we have at one of the cafeteria in the campus.  The soup is light and has that spicy kind of taste and it's cheap, only RM3.80 per bowl. The weekend is approaching and I have already imagine how busy and hectic its going to be for me for the coming month of Ramadhan.  Friends have already placed orders for their  cakes and cookies.  I have yet to have a list of orders taken yet.  ****sigh*****...

Ramblings only

A dear friend received some good news last month and treated 2 of us over lunch.  Since that she is a very private person, I am not allowed to share any pictures in my blog, ahaks!!!...so, in the  true spirit of blogging (cewah...ada kah?!!) I only took a picture of one of my platter especially for the blog. What's a blog without pictures right?... Looking at this picture again, I can't seem to recall what these were, but I remembered that these were grilled tomatoes, some sun-dried tomatoes, grilled chicken, potatoes, sweet potates, zucchini, capsicum with coriander leaves and generous sprinklings of parmesan cheese.  I finished every single thing here and yesss, it was simply delish. Forgive the amateurish appoach to this particular photo ya, I simply took a snap of this while waiting for them at the lobby to ease the boredom.  Luckily I didn't wait too long though. When duty calls....

Campus was buzzing with a hype of activities the last 3 weeks.  First it was the SUKBOM(Sukan Bomba satu Malaysia), of course we were not involved but  all the participants were staying in our campus since it was already the  semester holidays.  Well, with one of the best sports facilities around now, the university has been chosen to house the Sarawak athletes during their pre-SUKMA training a few months ago. Majlis Anugerah Gemilang UNIMAS(MAGU 2012) Majlis Perbarisan Tamat Latihan dan Penyampaian Sijil Kor SUKSIS IPTA Semalaysia Kali Ke-8 2012    So, there goes my 2 weekends. But alhamdulillah, everything went well especially the ones with SUKSIS though it was dead stressful the whole session.  Nope, am not going into details.  Let that be our "sweet memories" .   We were already on duty from 6:30 am till 10:30pm.  But when people appreciate your effort, all hiccups were already forgotten. We were glad it was over and now looking forward to the next one

the coming of Ramadhan

Enough with all the sad part of my life in the previous entry and now I am so looking forward to Ramadhan, which  is just round the corner and the atmosphere is already felt everywhere particularly in supermarkets. You'll see boxes of  a variety of dates being stacked here and there.  Honestly, it is a beautiful sight indeed.  I simply can't wait to perform my fasting this year, insyallah.  To all friends and families out there, here's wishing you a Happy Ramadhan Mubarak.  May Allah's blessings shower upon us during this holy month. Ku Mohon....

While I was away from the blogging world, or was I?..hmmm, anyway.... I did a lot of blogwalking here and there for some kind of comfort and escapism. During those soul-searching and self-reflecting period I thrive on motivating and inspiring blogs and some good reading materials to keep my spirits up.    Alhamdulillah, I have recovered, and from what?...    Not sharing it here but suffice to say  I don't believe that the first cut is the deepest, the second one hurts more than latter.  Will I be able to trust  again after this?...only time will tell and God knows when.   Picture credit to Iluvislam.com It has not always been an easy journey for me but I consider myself to be strong though there were times I stumble and fall but I always believe that there is always light at the end of the tunnel.  I just have to get hold of myself and be positive, come what may....

It's been quite a while.  It is a challenging time for the family and me at the moment.   It's not easy just to brush off your fears, worries etc and I have to keep on reminding myself to be strong.  Oh yes, I am laughing together with friends and cracking some jokes but deep inside, my emotion is stormy.  For now, I may not be blogging as usual but  I still do loads of BW cos some blogs inspires and motivates me in times like this. Selamat Hari Gawai

Some says that when you are in love you are in a very fragile state of mind. Either you hang on there or simply fall to the rules of love. Now,  why am I suddenly talking about this?. Oh well, the topic just crossed my mind.  Right..let's put that aside. The Gawai festival is just around the corner and almost all my Dayak friends is on leave already to prepare for the celebration.  Therefore, I did not want to miss to join the fun too..as the festivities mood is in the air, I decided to bake some cookies for sale and there were gone immediately. Aiee...sapa yang sambut Gawai sebenarnya ..hehehehe.. Clockwise : Choc Chip Cookies, Cornflakes Crunchies and  Biskut Kacang Ghee So to all Dayak friends and my relatives celebrating Gawai Dayak.  Selamat Hari Gawai.  Have a blast everyone, happy holidays and to those driving during this coming long holidays, drive safely.

Holiday Mood

I need this break so badly. It's been 2 years since my last visit to Miri and I've been itching to go back again but due to other prior commitments I had to put that aside and soooooooooooooo...Miri here I come.....yessss, am counting the hours to be in Miri soon. Apart from spending time with family and friends I am looking forward to spend time at the beach and enjoying watching either sunrise(errkkkk....) and sunsets.
